Method

  • Dice the eggplant into 7-8mm cubes and soak in water. Wrap the yellow pepper loosely in plastic wrap and microwave (600W) for about 1 minute 30 seconds, then cut out small star shapes. Dice the tomatoes into 2cm cubes.
  • In a frying pan, add the ground beef, drained eggplant from step 1, tomato, grated garlic, and grated ginger and fry over medium heat. Once cooked, add the mixed ingredients from step A, evaporate the water, and fry thoroughly to make the meat miso.
  • Boil the udon according to the package directions, add the okra about 1 minute before the noodles are done, and boil together. Rinse the udon under running water, cool, and drain well. Cut the okra into thin slices.
  • Place the udon noodles (③) in a bowl, top with (②), garnish with the yellow pepper (①) and okra (③), and pour the noodle sauce over them.

Cooking points
